ENHANCE YOUR SOUP WITH CHAGA MUSHROOM POWDER

Here is one of our favourite winter warmers that incorporates Chaga:

• 30g unsalted butter

• 2 tbsp olive oil

• 2 onions, finely chopped

• 3 garlic cloves, crushed

• 1kg butternut or golden butternut squash peeled and cubed

• 500g carrots, peeled and roughly chopped

• 2 celery sticks chopped

• 1 L fresh vegetable stock

• 1\2 tsp turmeric

• 1/2 tsp chilli flakes

• 2 tsp of nourish and Glow Drinks Chaga mushroom powder

• Salt and Pepper to season

• 1 Tbs of natural yoghurt

• Add the butter and 1 tbsp oil in a pan or casserole dish and set over a low heat. Add the onions, garlic and a pinch of salt and gently sautee until the onions have sofened.

• Add your squash cubes, carrots, chaga mushroom powder, stock and 200ml water. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the squash is completely soft. Remove from the heat and leave to cool for 10 minutes. Blend until completely smooth; season.

Season with chilli and a dollop of natural yoghurt!
